Fairmont Mayakoba is nestled into a unique location about 45 minutes south of Cancun on the Riviera Maya which combines rich mangrove and lush sand beach. You can traverse the 240 acres by bike or boat, and swim in multiple pools or the ocean, and snorkel, sail, or just play the day away.

Our room was tucked into a casita and faced a waterway that threads through the mangrove.

There are 5 fabulous restaurants on property, all run by celebrity chef Richard Sandoval. Although this isn’t an all-inclusive resort, you can choose to add a meal plan to your hotel stay.

At El Puerto restaurant, we loved the fusion of Asian and Latin cuisines, especially the wafer thin slices of Wagyu beef we got to cook on a hot rock.

We also loved the ceviches and guacamole at waterside La Laguna (also the site of a fantabulous breakfast buffet that was possibly the best we’ve ever had, serving up everything from unique juice blends and to chicken mole — everyday!)
